Vegan Chocolate Chip and….. a Granookie?

Here are two recent deserts I have made. I am still working on my vegan baking skills, but I felt these were blog worthy. 🙂

Vegan Chocolate Chip Cookies

These turned out so well! I was so excited to share them with you. I encourage non-vegans to try to not like these 😉

Ingredients
½ Cup Earth Balance vegan butter
½ Cup light brown sugar
3 Tbsp ground flax seeds mixed with ¼ cup of water
1 tsp vanilla
1 Cup whole wheat flour
¾ Cup all purpose flour
1 tsp baking soda
1 tsp baking powder
½ Cup vegan chocolate chips

Instructions
1. Preheat oven to 350 degrees
2. Mix Earth Balance and light brown sugar on medium speed
3. Whisk the ground flax seeds and water and add to butter/sugar mixture
4. Add vanilla and mix well
5. Combine flours, baking soda, and baking powder together and gradually mix into wet ingredients
6. Once mixture is well combined, stir in the chocolate chips
7. Drop by spoonfuls onto ungreased baking sheet and bake for 10-12 minutes or until done
8. Let cool on cooling rack or paper bag and enjoy with a glass of soy milk!

Makes 2 dozen cookies

Healthy Facts: Ground flax seeds can be used as a substitute for eggs in baked goods. They are rich in omega-3 fatty acids, fiber, and protein. This makes them a great alternative and healthier option than eggs.

Next up….THE GRANOOKIE!
Yes, I said granookie. Granola bar meets cookie = Granookie 🙂 Healthy, delicious, enough said.

Ingredients
1/2 cup unsweetened applesauce
1/2 cups maple syrup
1/4 cup organic agave nectar
1 tsp vanilla extract
3 Tbsp chia seeds
1 cup spelt flour
1 tsp baking soda
1 tsp baking powder
1 cup Country Choice Organic Mulitgrain Hot Cereal (mixture of wheat, barley, rye, and oats)
1/4 cup chopped prunes
1/4 cup chopped walnuts
1/4 cup vegan, or semisweet, chocolate chips

Instructions

1. Preheat oven to 350 degrees
2. Combine the applesauce, maple syrup, agave nectar and vanilla extract
3. Stir in the chia seeds
4. Combine the spelt flour, baking soda, and baking powder and gradually mix into the wet ingredients until well combined
5. Stir in the mixed grains, prunes, walnuts, and chocolate chips
6. Drop by spoonfuls onto ungreased baking sheets
7. Cook for 10-12 minutes or until done
8. Let cool on cooling rack or paper bag

Makes 2 dozen granookies

Healthy Facts: This snack is low in fat and high in fiber, iron and protein. The chia seeds add volume to the cookies without adding flavor. They are rich in fiber, protein and omega fatty acids. I love the healthiness factor of this snack and the chocolate chips add just a subtle sweetness that help squash cravings. I always have to add a little bit of chocolate somewhere 🙂
