Beans, Beans, Beans

This past week we have had so many days there were rainy and gloomy. Well, like the saying goes: When the weather hands you chilly days…….make CHILI! (or something like that ๐Ÿ˜‰

I pulled out my trusty crockpot, which can make life so much easier sometimes, and started adding the ingredients. I love that crockpots can pretty much make the meal for you. You just put in all of your ingredients, turn it on, and in a few hours you have dinner! It’s amazing! This vegan chili was so filling and nutritious. Honestly, you won’t miss the meat. It’s full of fiber and protein to keep you full for hours. Here are the steps:

1 can organic garbanzo beans
1 can organic black beans
1 can organic pinto beans
1 can organic red kidney beans
1 can diced tomatoes
2 carrots chopped
1 red bell pepper chopped
2 cups vegetable broth
1 cup water
1 tsp cumin
1 tsp chili powder (or more to taste)
1/2 tsp nutmeg
1 tsp oregano
1 tsp garlic powder
1/4 tsp red pepper flakes

1. Pour all ingredients into your crockpot, turn on high and let simmer for 2 hours (can be kept on low for a longer period of time)
2. Serve in bowls with vegan sour cream, avocado, vegan shredded cheese, or whole grain bread or crackers
*If you don’t have a crockpot you can add all the ingredients into a pot and let simmer on the stove until flavors combine and the beans cook

  1. Hi Tracey! I’ve always wanted to use my crockpot to get my meals cooking while I’m out but always feared of coming back to a house on fire ๐Ÿ™‚

    This chili sounds so good, nutritious and perfect for the slightly chilly days!
