Best side dish to go with any meal

There are some days where I have a main for my meal, but nothing to pair it with and others when I have a side dish, but nothing to act as the star of the show. If you are struggling with the former issue, then I have the solution for you. Actually, your main might want to watch out because this might just steal the spotlight 😉

Baby Bok Choy Drizzled with Ume Vinaigrette (adapted from The Kind Diet)

Ingredients:
2 small heads bok choy
1 Tbsp ume plum vinegar
2 Tbsp extra virgin olive oil
sea salt
fresh ground black pepper
toasted sesame seeds

Directions:
1. Sauté bok choy in 1 Tbsp olive oil just until tender and it starts to wilt. About 5-7 minutes. You can also steam the bok choy if you want.
2. Transfer the cooked bok choy to a serving dish.
3. Mix the oil and vinegar in a small bowl and drizzle over the bok choy.
4. Season with salt, pepper, and toasted sesame seeds to your liking.

Serves 2

This side dish will pair greatly with pretty much any meal. It’s also great if your main dish takes a lot of preparation and you want a fast and easy side!
