Chocolate Peanut Clusters

I hope you have all enjoyed the cookie recipes over the past few days. If you missed them, make sure to check out the Gingerbread Men, Meltaways, and Chocolate Chip Cookies. Today I wanted to start sharing some more candy-like recipes. So, in case you are short on time and need a quick dessert to take to a holiday gathering, these next couple of recipes are so quick, easy and delicious. With no more than five ingredients per recipe, you’ll have these whipped up in no time.

The Chocolate Peanut Clusters are one of my favorite. My mom has been making these for years and now I find them to be a crowd pleaser whenever I make them for a party or hand them out as gifts.

Chocolate Peanut Clusters

2 cups dry roasted peanuts
5 oz butterscotch chips*See Note
6 oz vegan chocolate chips

Combine chocolate and butterscotch chips in a microwave safe bowl and microwave for 1 minute. Stir and return to microwave for another 30 seconds. Stir and continue cooking in 30 second increments until chips are melted. Make sure to stir after each increment and be careful to not over cook the chocolate. Once the chocolate is melted and creamy, add the peanuts and stir until all the peanuts are well coated. Drop spoonfuls onto a sheet of wax paper. Let sit for 30-60 minutes before storing in an airtight container.
*Note: I wanted to provide you with all vegan holiday recipes, however, I ended up using regular butterscotch chips for these. Vegan ones can be purchased in specialty food stores or online.
