I hope you have all enjoyed the recipes throughout the week. I have one more to share, just in time for the holiday weekend. This is a new one that I have never tried before, but figured I would give it a shot. I saw it on Jessica’s blog, but she found the recipe on Eating Well.
Peanut butter, pretzels and chocolate all combined in one yummy dessert. What’s not to love? I could see these being good any time of the year, especially when you are wanting that sweet/salty combo.
Peanut Butter Pretzel Truffles
1/2 cup natural peanut butter
1/4 cup finely chopped salted pretzels
1/2 cup vegan chocolate chips
1/4 cup vanilla almond milk
1 tsp vanilla extract
1. Combine the peanut butter and pretzels in a bowl. Chill in freezer for 15 minutes.
2. Roll peanut butter mixture into small balls and place on a baking sheet lined with parchment or wax paper. Freeze until firm. I left mine in for a full hour to make sure.
3. Make the ganache: Combine the chocolate chips and milk. Heat and melt gradually in a saucepan or microwave. Stir until creamy. Add the vanilla extract and stir.
4. Remove peanut butter balls from the freezer and dip in chocolate ganache. Place on baking sheet lined with parchment or wax paper and refrigerate or until firm. About 30-45 minutes.
