Vacation Delay and Healthy Comfort Food

Thanks to those who took some guesses on where I would be traveling. Haha..I didn’t make it very hard to figure out. The answer was, of course, Disney World. Saturday, Chris, his parents, and I were scheduled to head down to Orlando, FL for a vacation. However, due to an unfortunate incident, we ended up canceling the trip. After a hard battle with cancer, a family friend passed away the morning we were scheduled to leave. Please keep her and her family in your thoughts and prayers.

For now, Disney World will have to wait. In the meantime, I immediately began cooking. When thinking of what to make in this situation, I immediately thought of my vegan lasagna. It’s healthy, comforting, and travels well when taking it to someone’s house. Along with some light appetizers, Trader Joe’s brownies (chocolate was necessary), and a good red wine, you have the perfect dinner for a night of comforting loved ones. The lasagna also makes for easy, re-heated leftovers during the week.

This recipe has been such a crowd pleaser and many people cannot believe it is vegan. The tofu mixture tastes just like the ricotta cheese you would generally use in a lasagna and the veggies create a filling dish that will even make carnivores coming back for seconds, without missing the meat.
