Anyone doing anything fun for St. Patrick’s Day today? I don’t know how the rest of the day will go, but it’s supposed to be 64F and sunny, I am well stocked with beer and cupcakes, and my day started out with VOOIAJ. Life is good 🙂 For those of you who don’t know what VOOIAJ is, don’t worry, I had never experienced it until today. You may remember me posting a long time ago about VOO (Vegan Overnight Oats), well these are actually Vegan Overnight Oats In A Jar! I’ve seen them on a few blogs in the past, but never gave them a try. Now that Spring is upon us, I am ready for smoothies and cold cereals again. So here’s how it works….
You know when you get down to the end of the peanut butter or almond butter jar and there’s just that tiny bit left? Don’t throw it away! Either scrape it out with a spoon and eat it…..or make vegan overnight oats in a jar!
Add in 1/3 cup oats, 1 Tbsp chia seeds (optional), 3/4 cup almond milk, cinnamon, vanilla, and fruit of choice (I used blueberries). Stir to mix, put lid on jar, and keep the jar in the refrigerator overnight.
In the morning, get your spoon ready and add your toppings. I used a tiny bit of sweetener and a handful of Trader Joe’s Os. You get to scrape out the remaining nut butter with each bite and it is delicious. You may never want to eat cereal any other way 🙂
