Lettuce-less salad

Who says a salad has to contain lettuce? Sometimes it’s nice to let some other veggies shine through on their own without being overwhelmed by leafy greens.

This salad is all about keeping things simple, filling, and clean. Feel free to adjust to your liking. That’s what salads are about. Letting you combine all your favorites in a bowl, seasoned and dressed to your tastes!

Garden Fresh Chickpea Salad
Ingredients:
1 can chickpeas, drained and rinsed
1/2 cup sliced black olives
1 medium cucumber chopped
1 tomato chopped
2 Tbsp olive oil
2 Tbsp rice vinegar
garlic powder
onion powder
freshly ground black pepper
pinch of kosher salt
chopped, fresh basil
chopped, fresh oregano

Directions:
1. Toss all ingredients in a large bowl. Adjust seasoning to taste and enjoy!

This salad really highlights a few ingredients that are fresh and in season right now. Last time I visited my parents, they stocked me up on fresh herbs and produce from their garden. Fresh veggies always taste so much better. This salad was light and summery and made for a perfect lunch yesterday afternoon.

I also lucked out that Chris had other things in mind for lunch because I now have leftovers waiting for me in the fridge for today!

Hopefully it does the trick and helps me push through the rest of this Monday. Anyone else dragging today?
