Bringing back the Lunchable

First order of business…

Pumpkin Spice lattes are back at Starbucks. I always have to have at least one of these during the Fall and Winter seasons, and with a week straight of rain and gloominess, I needed this splurge to brighten my mood. It was just as good as I remember it being 🙂

Now let’s talk lunch. Remember these?

Honestly, I wasn’t that huge of a fan of the Lunchable when I was a kid (anyone else think the meat looked weird?). I really liked the idea of it and secretly envied the kids who were making their own cracker sandwiches at lunch. However, when it came down to it, give me a pb&j or turkey sandwich with a Ho Ho any day. I will admit that the pre-made convenience of it was appealing. So after getting the idea from a friend of mine, I decided to make my own!

Oh, and I veganized it as well 🙂

My Lunchable, thrown together in seconds and ready to take to work with me, consisted of Tofurky (yep, still a weird meat), vegan cheddar cheese, and rice crackers. I even threw on some honey mustard for some extra flava.

So simple and could be customized in many ways. Change up the crackers, “meat”, and cheese to your own liking, add an apple or banana, or even some carrot sticks, and you’ve got yourself a Lunchable that most moms would be proud to serve. Or one that a grown up kid would be happy to eat 🙂 A greek yogurt was enjoyed along with mine and kept me full for hours.

If you’re interested in my workout today, I decided to do my lower body workout. It’s a pretty good one, and will have you sweating like crazy and done with your workout in a half hour. You know I love my power half hour workouts 🙂

Off to grab a snack (probably cereal) and watch a little football. Tomorrow’s Friday! See you then!
