Sloppy Lens

Remember when you were a kid and it was sloppy joe night? Remember how good that was? I mean, here’s a meal where, not only is it acceptable for you to be messy, but it’s encouraged! You could have sauce smeared all over your face and dripping down your arm and no one would say anything except, “want another?” It was amazing.

Since becoming a vegetarian, I figured those days of eating a purposefully sloppy meal was behind me.

WRONG.

Not only did I recreate a vegan version, but they’re healthier to boot! We’ll call them Sloppy Lens 🙂

Sloppy Lens
Ingredients:
1 cup lentils, rinsed
3 cups water
1 medium green bell pepper, diced
1 medium red bell pepper, diced
2 tsp onion powder
2 cloves garlic, chopped
1 bay leaf
1 6 oz can tomato paste
pinch of salt
1/2 tsp oregano
1-2 Tbsp chili powder, to taste
1 tsp paprika
1 tsp ground mustard
1/2 tsp apple cider vinegar
1/2 tsp Tabasco sauce
1 tsp honey or agave nectar

Directions:
1. Combine water, lentils, peppers, onion powder, garlic, and bay leaf in a large pot. Bring to bowl, reduce heat and simmer for 30 minutes.
2. Remove bay leaf, stir in the rest of the ingredients, and heat through. Adjust seasonings to taste.
3. Serve on whole wheat buns and enjoy! I also added a slice of vegan cheese because….well….it’s cheese!

Of course a little green needed to accompany the meal as well, so a pea and edamame combo was served.

Okay, so maybe not quite the same taste-wise as the sloppy joes I ate growing up, but these Sloppy Lens were just as messy and delicious in their own right. Try them, you’ll see what I mean. And I won’t judge you for having to lick sauce off of your arm 😉
