Most recently, my summer adventures have taken me on an all-day hiking expedition. Nothing like an eight-hour day of hiking. Of course, two-thirds of that time was spent planning and prepping the proper picnic to enjoy along the way. When embarking on an eight mile hike, having the right source of nourishment is imperative. I’m joking (kind of).However, when suggesting we throw a couple PB&Js in our backpacks, it was laughed off. And this is why I know I had the perfect hiking partner who helped me gourmet the shit out of our hike.

The picnic

Our light feast consisted of chips and homemade guacamole, veggie spring rolls with peanut dipping sauce and fresh watermelon. In other words, amazing.

If you have avoided making your own spring rolls, thinking they are too involved, then you are mistaken. If you have all of your ingredients ready (this is important), they can be quite simple and quick to throw together. The ingredients can vary, so feel free to get creative. For our hike we saw the spring roll offering something light, fresh and portable to our picnic. The perfect accompaniment to a midday meal or afternoon snack. So, when it came to ingredients we utilized fresh herbs to create a very green and refreshing summer roll.

Fresh veggie and herb spring rolls
1 cucumber cut into small, thin strips
1 cup chopped fresh basil
1 cup chopped fresh cilantro
1 cup chopped fresh mint
1 cup boston lettuce, torn into small pieces
1 cup thin rice noodles, cooked and cooled
1 package rice spring roll wrappers

1. Prep your ingredients and lay out to be easily reached.
2. Warm a few inches of water in a shallow dish or fry pan. One at a time, place the rice wrapper in the water until it softens. Carefully remove from water and lay flat on counter top or work space.
3. Begin placing a small amount of each ingredient in small pile two inches from end closest to you. Take end closest to you and fold over the pile of ingredients. Fold in sides and continue rolling until the spring roll is completely wrapped (similar to a burrito).
4. Continue with remaining wraps and ingredients.

Easy peasy peanut dipping sauce
2 Tbsp Hoisin sauce
1/2 Peanut butter
Soy sauce, to taste (about 2 tsps)
Water (if needed)

Directions: Combine ingredients, except water, in a sauce pan and heat over medium high. Stir mixture until peanut butter has melted and combined with other ingredients. Depending on what type of peanut butter you use, you may need a little water to help thin out the sauce. Use at your discretion. Easy enough? Now pour into a bowl and grab a spring roll. Or package it up take a hike. We did.
