Clean Eating Day TWO

Breakfast: Today’s green smoothie turned out looking a little more appetizing than yesterday’s due to the lack of blueberries in today’s. Green, green, green!

Contents of smoothie = 1 scoop Amazing Grass Wheat Grass, 1 tsp aloe vera, 1 frozen banana, 1/3 cup mandarin oranges, 1 cup spinach, 1 cup hemp milk—NEON!
I also paired it with a homemade granola bar (or Trebar as I like to call them 😉 )

Lunch: After meetings all morning, I finally got around to lunch at 1:30pm and I was staaarved! When my stomach is calling and I want food NOW, I turn to my go-to lunch…..the veggie sandwich. I pop bread in the toaster and grab whatever veggies I have on hand, along with some hummus. Done.

Sandwich makings: 2 slices of Ezekial bread, 1/4 avocado, cucumber, red pepper, hummus……so good. I followed up the sandwich with somethings else I have been working on.
Energy cookie 🙂

Dinner: I was very excited for dinner tonight. I have been wanting to make kale chips for so long, but I always forget to buy kale when I’m at the store. I finally remembered this week and they were DELISH! I can’t wait to play around with them and add different spices next time!

Kale Chips: Wash kale and spread out onto a baking sheet. Drizzle with olive oil and season with salt and pepper. Massage the seasoning and oil into the kale and bake at 350 degrees for around 20 minutes.

Sweet potato fries: Cut sweet potatoes into chunks. Spread them out onto a baking sheet and season with olive oil, salt, pepper, and garlic powder. Bake at 375 degrees for 30 minutes.

Gardein Chicken: Sautee in pan with seasoning of choice for 5 minutes.

This meal was so good! I can’t believe I haven’t tried kale chips before. Healthy, filling and delicious. Kale gives this meal a punch of beta carotene, Vitamin K, Vitamin C, Vitamin A and calcium 🙂

As far as workouts go, I was up and out the door for a run this morning. I’m loving this fall-like weather we have been having in the mornings. It makes for great running weather.

Climbing! (Confession: Yesterday I said I was off to go climbing, well we failed and didn’t end up going. I got dressed and ready and Chris said he wasn’t feeling well so we skipped it. After all I can’t go without someone to belay me 😉 We made it there today though. Not one of our strongest nights, but we still climbed for around 40 minutes. )

Late post tonight. I’m off to relax and watch a movie before bed. Night all!
