Bella Sandwich

We work a lot. We stress a lot. We are on the go…a lot. As busy people, it’s easy to get caught up in the little things every day and to miss some of the big things in the process. Unfortunately, I like having a roof over my head and food in my belly so I can’t get rid of the 9-5. BUT, I can maximize the time I do have away from the cubicle. So, this summer Cooper and I have been hitting the road for little weekend getaways. This past weekend served as an opportunity for a white water rafting and kayaking trip in North Carolina. A time where I let out my inner drama queen to freak out about how I will probably fall out of the boat, get sucked under the water and disappear in the rapids.

I’m happy to report that none of those things happened. Instead it was an adrenaline-rushing good time, followed by the most relaxing and peaceful kayaking experience. Three days + 15 hours of driving + exhaustion = totally worth it.

Another take away from the trip was a stop at one of the best food trucks I have had. Maybe it was due to being famished after fighting for my life (not really) while rafting, but the food was delicious. We tried two of their vegetarian options, sweet potato tacos and a portabella sandwich, so we could share. Both have been inspirations for meals this week for me. The ‘bella came into play tonight. The one from the food truck is still one I’d like to recreate, however, tonight I took a completely different spin on the sandwich.

That’s right, it’s literally a sandwich made from portabellas (she says in Rob Lowe’s character from Parks and Rec). Avocado, sliced tomato, egg whites and muenster cheese provide the filling. Get your napkins ready because it definitely isn’t the easiest sandwich to eat.

But, sometimes in life we have to roll up our sleeves and get a little messy. What’s life without a little adventure?
