Regrouping

Anyone else as happy as I was about that extra hour of sleep last night?? I took full advantage of it. I am not, however, looking forward to the shorter days that are to come. We’re only one week into November and I’m already having trouble staying motivated and getting myself out of bed in the morning.

Last week I definitely spent too many days hitting the snooze button and have started to feel the effects both mentally and physically. As tired as I felt last week, I found myself even more so after skipping a few days in a row of working out. It just goes to show that consistent exercise is not only beneficial for physical wellness, but for mental wellness as well.

To provide myself with the necessary energy to run errands, clean, and, um, sit on my butt, I started my Saturday off with pancakes 🙂

Apple cinnamon pancakes to be exact. They were delicious and the picture shows two, but I ate four. Here’s the recipe:

Apple Cinnamon Pancakes
1 cup spelt flour (you could also use whole wheat or all-purpose)
1 Tbsp baking powder
pinch of salt
1 Tbsp cinnamon (I like cinnamon)
3/4 cup almond milk
2 Tbsp agave nectar
1 tsp vanilla extract
1-2 small apples, chopped (depending on how loaded with apples you want your pancakes)

Directions:
1. Combine all ingredients, except apples, in a large bowl and whisk until mixed. Let sit for a couple of minutes.
2. Heat a griddle over medium heat. Spray with non-stick spray or coat lightly with butter.
3. Pour pancake mix into desired size,drop apple pieces into each pancake, wait for bubbles to form on the surface, then flip and cook the other side.
4. Top with pure maple syrup and enjoy!

A great thing about pancakes is that I usually have the necessary ingredients on hand. Because, you know, I was a little busy reading and snoozing to go grocery shopping.

This is what happens when you don’t have many groceries on hand. However, this forced me to be creative in order to find something acceptable to eat. I’m not complaining about the usage of whole grain waffles as the bread to my tofu sandwich. Incorporating breakfast foods into every meal is perfectly fine with me 🙂

Now the weekend is coming to a close and it’s back to the grind tomorrow. It’s a new week though and I’m looking forward to picking my workouts back up. I’m in need of some endorphins!
